Bleached out pictures

I have a Nikonos V and Aquaflash 28. When I shoot a light subject fish -- with a lot of white or silver-- the portion of the picture with the fish often is over-exposed. What to do? Sorry if this seems like an elementary question, but I'm pretty much an amateur.
